应用电子鼻技术对粳稻谷中霉菌定量分析 被引量:7

摘要 用德国Airsense公司生产的PEN3型便携式电子鼻系统分析检测不同储藏条件下粳稻谷的挥发性物质,结果表明:通过PCA分析,不同储藏条件的粳稻谷样品可以很好的被区分;利用Loadings分析传感器贡献率挑选W1S、W2S、W5S、W3S、W1W、W2W作为新传感器阵列,对15℃、25℃、30℃条件下的传感器响应值进行分析,25℃、30℃条件下传感器响应值要明显高于15℃条件下响应值,水分含量对传感器的响应值影响也十分明显,相同温度条件下,水分含量越高,传感器的响应值越大;采用SPSS18.0数据分析软件对传感器响应值与霉菌菌落总数进行相关性分析可知两者在0.01水平上呈显著相关性;在定性分析基础上利用PLS分析法对粳稻谷中霉菌数量进行预测,结果表明该方法具有可行性。 Rice stored at different conditions was analyzed by using an electronic nose(PEN 3)from Airsense Company in Germany.Through the PCA analysis,rice sample in different storage conditions were distinguished well,according to loadings analysis on the contribution rate of sensors,selected W1S,W2S,W5S,W3S,W1W,W2W as the new sensor array,results of analyzing the sensor response the values at 15℃,25℃,30℃ showed that values at 30℃and 25℃ were evidently higher than values at 15℃,moisture content also affected the response values of sensors evidently,at the same temperature,the higher moisture content was,the greater sensor's response value was.By Bivariate Dependency Analysis on the values of sensors response and the total number of mold colonies with the SPSS18.0,there were significant correlation at the 0.01 level between them.Based on qualitative analysis,results of making quantitative analysis of molds in rice with PLS method indicated that this way was feasible.
