摘要
为深入研究复合抗氧化剂之间的协同增效作用及其在食品贮藏保鲜中的应用,阐述了抗氧化剂的抗氧化作用、抗氧化剂协同作用评价方法,综述了复合抗氧化剂在肉类、油脂及富含油脂食品、水果、乳制品、水产品贮藏保鲜中的应用,展望了复合抗氧化剂在食品贮藏保鲜方面的应用前景。
To indepth study the synergistic effect of multiple antioxidants and its application in food preservation,in this paper the function of antioxidants and the appraisal of anti-oxidant synergy were briefly described,the application of multiple antioxidants in maintaining freshness processing of meat,fats and high-fat foods,fruits,dairy products,aquatic products were reviewed,and the application of the multiple antioxidants in food storage was forecasted as well.
