纤维素酶是能将纤维素水解成葡萄糖的一组酶的总称,在酿造、养殖、食品、纺织等工业中具有广泛的应用价值,文中就纤维素酶的性质、来源、生产方法及其在酿造业中的应用进行了论述。
Cellulase is a multienzyme which can hydrolyze cellulose to glucose, and widely used in brewing, breeding, food, textile industry, etc. Properties, sources, production methods and application of cellulase in brewing industry was reviewed.
