摘要
该文从多方面对浓香型德山大曲窖泥的理化成分进行了研究。结果表明,不同窖池或层次之间的pH值、水分含量和全钾含量差异不显著。同一窖池不同层次的全磷含量呈现相同的变化趋势,底泥>壁泥>盖泥。不同窖池或层次之间的全磷、速效钾和铁含量存在明显差异。同一窖池的盖泥、壁泥和底泥的有效磷含量差异显著。
Physiochemical compositions in pit mud of Deshan Daqu liquor was studied in several aspects in this paper. The results showed that there were little differences in pH value, moisture content and total K among different pits or different levels. Total P exhibited a trend among different levels in the same pit, with the following order of bottom pit mud〉wall pit mud〉top pit mud. There were distinct differences in total P, rapid K and Fe content among different pits or different levels. The difference in available P among top pit mud, wall pit mud and bottom pit mud in the same pit was obvious.
