摘要
为了更好地综合利用红曲霉菌体滤渣,研究了红曲霉菌体的酶解条件。采用中性蛋白酶和碱性蛋白酶对红曲霉菌体进行复合酶解,通过试验,确定了适宜的复合酶解条件:中性蛋白酶酶量为5.0×104U/g(菌体),碱性蛋白酶酶量为7.0×104U/g(菌体),酶解温度为50℃,pH值为7.5,底物浓度为40g/L,酶解时间为18h。在此最佳条件下,复合酶解的水解度达到10.60%,明显高于单一蛋白酶的水解度。
To well utilize the cell filtered sediment of Mononscus, the enzymatic hydrolysis conditions for cell protein of Mononscus was studied. The optimum conditions were obtained as follows: neutral protease dosage 5.0×10^4 U/g (cell amount), alkali protease dosage 7.0×10^4 U/g (cell amount), enzymatic hydrolysis temperature 50℃, pH value 7.5, substrate concentration 40g/L and enzymatic hydrolysis time 18h. Under above optimal condi- tions, the degree of composite enzymatic hydrolysis was 10.60%, which was significantly higher than that of single enzymatic hydrolysis.
