番茄红素油树脂的稳定性研究

摘要 本文考察了温度、光照、微波辐射及金属离子等理化因子对番茄红素油树脂稳定性的影响,结果发现,常温下番茄红索油树脂比较稳定,但较高的温度(〉50℃)对油树脂中番茄红索破坏较强;日光下对油树脂中番茄红索有一定的破坏作用;微波辐射对油:对脂中番茄红素的破坏作用很大;金属离子中Na+、Ca2+和Zn2+对油树脂中番茄红素的影响不大,Fe2+和Cu2+对油树脂中番茄红素有很强的破坏作用。 The influences of physical and chemical factors such as temperature,light, microwave radiation and metal ions on lycopene oleoresin stability were studied. It was found that lycopene oleoresin is relatively stable at room temperature, but the higher temperature ( 〉50℃ ) has strong destruction on lycopene in oilresin,sunlight has some damaging on lycopene in oilresin, microwave radiation has great destructive effects on lyeopene in oilresin, metal ions such as Na+ , Ca2+ ,and Zn2+ has little effect on lycopene in oilresin,while Fe2+ and Cu2+ is destructive for lycopene in oilresin.
