超微粉碎对荸荠皮物料特性的影响

摘要 为研究超微粉碎对荸荠皮物料特性的影响,考察不同超微粉碎时间荸荠皮微粉休止角、持水力、持油力、溶胀性和水溶性,以及超微粉碎前后荸荠皮主要成分含量的变化。结果表明,超微粉碎后荸荠皮微粉休止角增大,粉碎20 min时达到最大值41.46°。超微粉碎能有效提高荸荠皮微粉的持水力和持油力,粉碎20 min时持水力和持油力分别达到最大值129.3%和103.3%。荸荠皮溶胀性随粉碎时间先下降后升高,总体变化不大。50 min的超微粉碎能使荸荠皮水溶性从19.6%提高到33.8%。60 min的超微粉碎处理使荸荠皮不溶性膳食纤维含量从42.00%降低到34.33%,其他成分含量变化较小。 To study the effect of ultra-fine pulverization on the material characteristics of Eleocharis Tuberose peel,the value of repose angle,water and oil holding capacity,water swelling and water solubility charactristics of Eleocharis Tuberose peel super-fine witch were ultra-fine pulverized by different minutes were inspected,and then,the change in content of the main component of Eleocharis Tuberose peel were inspected,too.The results demonstrated that the repose angle rised after ultra-fine pulverization,the maximum value reach to 41.46°after pulverizing 20 min.The water and oil holding capacity of Eleocharis Tuberose peel can be increased by ultra-fine pulverization,by pulverizing 20 min,the maximum value reached to 129.3 % and 103.3 % respectively.The water swelling characteristic was increased at first and then decreased with pulverization time,but the general variation was little.By 50 min pulverization,the water solubility of Eleocharis Tuberose peel can be increased from 19.6 % to 33.8 %.The content of the main components changed little by 60 min pulverization but the IDF(insoluble dietary fiber),the content of IDF decreased from 42.00 % to 34.33 %.
