摘要
研究NaOH溶液水发毛肚时,碱液浓度与浸泡时间对毛肚涨发效果的影响,以毛肚增重百分比及感官评分为指标,通过单因素试验和正交试验选择出毛肚的最佳水发工艺。结果表明:毛肚水发的最佳工艺条件为20 g/3000 mLNaOH溶液浸泡30 min,清水浸泡1 h。该条件下,毛肚平均增重百分比为139%,涨发效果较好。
The objective of this paper is to study the effects of lye concentration and immersion time on the rehydration of beef tripe using sodium hydroxide solution.By single factor and orthogonal design,rehydration condition was optimized with weight-adding and sensory evaluation score as the evaluating indexes.Results showed that the optimal condition of rehydrating beef tripe is using lye with concentration of 20 g/3 000 mL,lye immersion time 30 min and fresh water immersion time 1 hour.Under these conditions,the rehydration effect of beef tripe is good and the average percentage of weight-adding reached 139 %.
