珍珠薏米保健饮料的研制 被引量:3

Study on Compound Health Beverage of Pearl and Coix Seed

摘要 以珍珠和薏米为主要原料,经过酶解、过滤、调配等工艺研制品味纯正的珍珠薏米饮料。通过正交试验,确定最佳调配组合为:蔗糖5%,果汁20%,珍珠、薏米的比例为1:1。对饮料的可溶性固形物、酸度、还原糖、金属元素、氨基酸含量等指标进行测定,结果为还原糖含量:1.4mg·mL-1;可溶性固形物:3.2%;pH值:5.48(15.5℃)。Zn、Mg、Fe、Mn、Na、Ca、K等7种金属元素的含量分别为0.1072,2.105,0.1801,0.1298,163.75,101.84,26.453μg·mL-1。Cd、Pb、Cr、Cu、Co等均未测出。且含有Asp、Thr、Ser、Glu、Gly、Ala、Val、Met、Ile、Leu、Tyr、Phe、Lys、His、Arg和Pro等16种氨基酸。 Pearl powder and coix seed were hydrolyzed with enzyme,filtrated and blended to produce pure taste health beverage.With the help of the orthogonal test,the best formula was that sugar was 5%,fruit juice was 20%,pearl:coix seed was 1:1.The properties of beverage were tested.The results showed that reducing sugar was 1.4 mg·mL-1,the soluble solid was 3.2%,pH is 5.48(15.5 ℃).The contents of metal elements of Zn,Mg,Fe,Mn,Na,Ca,K were 0.107 2,2.105,0.180 1,0.129 8,163.75,101.84,26.453 μg·mL-1,respectively.There were no metal elements such as Cd,Pb,Cr,Cu and Co.There were 16 kinds of amino acids in the beverage,Asp,Thr,Ser,Glu,Gly,Ala,Val,Met,Ile,Leu,Tyr,Phe,Lys,His,Arg and Pro.
