烘烤过程中不同变黄条件对上部烟叶主要化学成分的影响 被引量:4

摘要 采用韩式密集烤房与三段式烘烤工艺技术,研究不同变黄程度转定色条件下上部叶主要化学成分变化。结果表明:随着烘烤时间的延伸,9成黄转定色条件下,上部叶总糖、还原糖含量较高,但淀粉、烟碱、总氮、蛋白质降解充分;烤后烟叶化学成分含量适中,各成分比例较协调。 The effect of different yellowing on chemical component of flue-cured upper tobacco leaf during yellowing stage was studied with South Korea bulk curing barn and three stages curing of flue-cured technology.The results indicated that as the curing process proceeding,under the condition of 90%yellowing and high-speedcolor-fixing,the content of total sugar and reducing sugar were higher,but starch,total nitrogen,protein and nicotine in upper tobacco leaf degraded fully.Under the condition of 90% yellowing and high-speed color-fixing,the content and ratio of chemical composition in the cured upper tobacco leaf were more appropriate.
