摘要
以南汇水蜜桃为材料,研究经羧甲基壳聚糖保鲜剂处理之后并于2℃低温贮藏的水蜜桃表皮中类胡萝卜素、叶绿素、类黄酮、花青素含量的变化,以及保鲜处理对水蜜桃外观品质的影响。结果表明:电解水浸泡加羧甲基壳聚糖保鲜涂抹剂能有效减缓水蜜桃果皮中类胡萝卜素、叶绿素、类黄酮、花青素的分解速度,从而使经该法处理过的水蜜桃在2℃低温下储藏44 d后仍能保持优良的外观品质;延长了货价期,显著提高了鲜桃经济价值。
The Nanhui juicy peach was used as experimental material to study the content changes of carotenoids, chlorophyll, flavonoids and anthocyanin in peach peel after treated with carboxymethyl chitosan preservative and stored at 2℃ and the effect of carboxymethyl chitosan preservative on appearance quality of juicy peach. The results demonstrated that carboxymethyl chitosan preservative can effective slow the decomposition rate of carotenoids, chlorophyll, flavonoids and anthocyanin in peach peel, thereby the appearance quality of preservative treated juicy peach was better than that of non-treated juicy peach. In the experiment, the processed juicy peaches remain good appearance quality even after a storage period of 44 days.
