摘要
中国南方各地以稻谷为主食的地区对米粉命名没有统一规则,河粉似米线,"米粉"非米粉。本文归纳总结了各种米粉起源、种类以及制作工艺,通过对线状米粉、粉状米粉不同制作工艺比较,对各类米粉进行较系统的划分,旨在通过对两类米粉的历史溯源,了解其发展现状及趋势,从而服务于"做大做强米粉产业"的理念。
