将TA.XT plus物性测试仪应用于传统白酒生产中,通过大量试验并对试验结果使用质构曲线解析法进行分析获得酒糟测定参数为:硬度、粘性、弹性、内聚性、回复性,并使用这些参数对不同感官的糟醅进行初步测定分析。

TA.XT plus Texture Analyser was applied in the production of traditional liquor, the measured parameters, determined by texture profile analysis of a large number of experimental results, were concluded into hardness, adhesiveness, springiness, cohesiveness and resilience, and the physical properties of different distiller＇s grains could be measured by using these measured parameters.
