摘要 真菌毒素是一类由真菌产生次级代谢产物,其种类繁多、且能污染多种作物和食品;真菌毒素一般都具有强烈毒性或致癌、致突变作用,对人和动物安全健康形成巨大隐患。该文主要从微生物菌体吸附作用、微生物降解作用等方面介绍生物方法去除真菌毒素研究进展,说明生物方法去除真菌毒素反应条件温和、降解效率高、不会对食品营养价值造成大的流失,生物方法将可能逐渐成为去除真菌毒素首选方法。 Mycotoxins which are secondary metabolites of fungal have a great variety and are present in kinds of foods. Mycotoxins have seriously affected health of human beings and animals because of their toxicity. We have an introduction of up-to-date research on biological detoxification of mycotoxins from microbial absorption microbial degradation. Then we find the methods of biological degradation of mycotoxins have gradually become the preferred methods, because of their mild reaction conditions, their high degradation efficiency and not causing a large loss of nutritional value of foods.
