山楂黄烷醇抗油脂氧化作用研究 被引量:3

摘要 采用DPPH法和Schaal烘箱法,研究了山楂黄烷醇清除自由基活性及油脂抗氧化作用。结果表明,山楂黄烷醇是一种较强的自由基清除剂和有效的油脂抗氧化剂。DPPH自由基清除作用的EC50为2.8mg/L;抗油脂氧化能力与添加量具有剂量效应关系,添加量为0.1%时效果与0.02%TBHQ相当;VC、柠檬酸和脂溶性茶多酚对山楂黄烷醇延缓油脂氧化均有协同增效作用。 The antioxidant effect of hawthorn flavanols(HF)was evaluated by DPPH method and Schaal oven-storage test.The results showed that the hawthorn flavanols was a strong scavenger of radical( EC50 = 2.8mg/L) and a effective antioxidant with dose-dependent to oil.The antioxidant effect of 0.1% HF was equally effective with 0.02% TBHQ. Vc ,citric acid and lipophilic tea polyphenols(LTP) exhibited synergism for the antioxidation of HF.
