摘要
以新鲜山药和东北茶藨子为主要原料,添加白砂糖、黄原胶,制作复合浊汁饮料。试验结果表明,其最优配比为:山药原浆20%,东北茶藨子原汁15%,白砂糖8%,黄原胶0.08%,制得的山药东北茶藨子复合饮料口感润滑、酸甜适口、色泽协调、营养丰富、组织状态稳定。
Using fresh Chinese yam and Ribes mandshuricum (Maxim.) Kom. as the main materials, adding sugar and xanthan gum to make compound beverage. The results showed that, the optimal formulation for this beverage was as following:.chinese yam juice 20%, Ribes mandshuricum (Maxim.) Kom. juice 15%, white granulated sugar 8%, xanthan gum 0.08%. The compound beverage taste lubrication, sweet and sour, has abundant nutritions, coordinate color and good stability.
