摘要
综述了水果物理、化学和生物保鲜技术及保鲜机理的研究进展,分析了不同保鲜技术方法的利弊,展望了建立适合我国国情的水果保鲜技术与安全质量监控体系的前景。
Advances in fresh-keeping methods of fruits were previewed in this paper including physical methods, chemical methods, biological methods and fresh-keeping mechanism. Advantages and disadvantages of different fresh- keeping methods were also analyzed. The fresh-keeping methods of fruits and security monitoring system according to the condition of our country were prospected.
