黑大豆种皮花色苷对亚硝胺体内外合成的阻断作用 被引量:5

摘要 在模拟人体胃液的条件下,通过测定N-二甲基亚硝胺(NDMA)的阻断率、NO2-的形成量和清除率,研究了黑大豆种皮花色苷(BSCA)体外对亚硝化反应的抑制活性;以血清谷丙转氨酶为测定指标,通过动物试验考察了BSCA体内对亚硝胺合成的阻断作用。结果表明,BSCA能明显阻断亚硝胺的化学合成,其最大阻断率为85.9%,对亚硝酸钠具有较好的清除活性,最大清除率为70.4%;其对硝酸盐还原酶还原NO3-为NO 2-的抑制率可达53.7%。体内阻断亚硝胺合成的实验中,BSCA组血清谷丙转氨酶显著低于对照组(P<0.01)。BSCA对亚硝胺的体内外合成均具有较强的阻断作用。 The activity of black soybean coat anthocyanins (BSCA) on inhibiting nitrosation was studied by measuring the blocking rate on synthesis of N - nitrosodimethylamine , formation rate and clearance rate of NO2 and providing simulated test human gastric juice conditions. The in vivo activity of blocking synthesis of nitrosamine was investigated by taking animal experiment, and taking serum GPT as a test index. The results showed that BSCA had obvious capability of blocking chemical nitrosamine synthesis. The maximum blocking rate of NDMA was 85.9%, the activity of scavenging sodium nitrite was relatively good. The maximum eliminating rate of nitrite sodium was 70.4%. BSCA can prohibit 53.7% of the reducing of nitrate reductase ( from NO3 - to NO2 - ). During the process of blocking synthesis of nitrosamine, the serum GPT in BSCA group was significantly lower than that in control group (P 〈 0.01 ). BSCA has strong inhibiting effect on blocking nitrosamine synthesis in vivo and vitro.
