芝麻油脚中粗磷脂提取工艺条件的研究 被引量:8

摘要 对从芝麻油脚中富集浓缩芝麻磷脂的最佳工艺条件进行了研究。结果显示,以磷脂含量为0.81%的芝麻油脚为原料,利用电解质水溶液对其中的磷脂进行絮凝富集,可以得到富含磷脂的芝麻磷脂粗品。通过单因素实验和正交实验得到从芝麻油脚中富集浓缩芝麻磷脂的最佳工艺条件为:加水量与油脚中磷脂质量比1.25∶1,电解质食盐添加量为油脚质量的0.4%,反应温度80℃,反应时间50 min2,0%柠檬酸添加量为油脚质量的0.3%。在最佳工艺条件下得到的浓缩油脚中磷脂含量为9.23%。 The optimal process of preparing sesame concentrate phosphatide from the sesame oil sediment containing 0.81% phosphatide was researched. Electrolyte used as the flocculating agent, phosphatide was flocculated and concentrated. By single factor experiments and orthogonal experiments, the optimal conditions were as follows : ratio of water amount to phosphatide mass in sesame oil sediment 1.25: 1, electrolyte amount 0.4% (based on the mass of sediment) , hydrating temperature 80℃, hydrating time 50 min,20% citric acid amount 0.3% (based on the mass of sediment). Under the optimal conditions, the crude sesame phosphatide contained 9.23 % phosphatide.
