芒果皮作为加工副产物,在目前的企业中都是作为废弃物丢弃,对环境造成了污染还浪费了资源。综述芒果果皮中富含的膳食纤维、果胶、多酚类等功效成分。膳食纤维用于加工面制品,果胶、多酚等生产食品添加剂,芒果苷及类黄酮开发抑菌产品等。
The mango peel is the waste of the mango process and pollutes the environment. The paper reviewed functional components including rich dietary fiber, pectin and pllyphenol in mango peel and their application. Dietary fiber was processed for flour products, pectin and polyphenol compounds for food additives, and mangiferin and flavonoids for preservatives.
