摘要 以已经提取出的蓝靛果忍冬色素为原料,研究光、蔗糖、食盐、氧化剂、还原剂、金属离子对其性质的影响。结果表明:光使色素的稳定性变差,糖、盐对色素的性质基本没有影响,该色素抗氧化性较差,抗还原性较强,Fe3+、Cu2+容易使色素褪色,Ca2+、Zn2+、Mg2+对色素无明显影响。 Pigment extracted from Lonicera caerulea L.var.enulis chosen as test material,the effects of light,sugar,salt,hydrogen peroxide,sodium sulfite deoxidization,metal ions on pigment were studied.The results showed that the stability of light on the pigment was poor,the sugar and salt were no effects on the nature of pigment,the antioxidant of pigment was poor,and the reducing character was strong,Fe3+and Cu2+ were easy to make pigment color fade,and Ca2+,Zn2+ and Mg2+ were no significant effects on pigment.
