摘要
馕坑是维吾尔族长久日常饮食文化的技术产物,主要用作烤馕和其他火烤食品的制作,已形成标准技术操作和专门行业。用热电偶测量热态馕坑的内表面温度,将馕坑口视作黑体,利用黑体辐射理论对4种不同的商用普通热馕坑的工作过程进行比较研究,给出了它们的典型垂直谱辐射能流密度分布图和相应的坑内谱辐射能量密度分布图,计算出了其峰值辐射所对应的波长和总辐射功率密度,并进行了一些讨论。
Tonur is a technical facility of Uyghur's long cultural dietetic life and mainly have been using in the duration of preparing Uyghur's breads, and of baking other manifold foods. We have used thermocouple to measure the temperature of inner surface of hot Tonur, regarded the upper hole of Tonur as a black body, and utilized the theory of black body radiation to four typical ordinary in business- servicing hot Tonurs, and studied by comparing the typical working processes of them, plotted spectral energy flux densities of vertical radiation from the upper holes and spectral energy densities in these Tonurs. We also have computed peak radiation wavelengths and total radiation power densities of them, and then made a short proper discussion.
