摘要
中国传统食品和菜肴历史悠久,种类繁多,具有独特的风味和良好的营养价值。目前,由于缺乏重视和投入,基础研究薄弱,生产技术落后,工业化程度低,严重制约了中国传统食品和菜肴的工业化进程。本文分析了中国主要传统食品和菜肴的发展现状和存在问题,提出中国传统食品和菜肴的发展趋势,并对中国主要传统食品和菜肴工业化生产过程中的关键科学问题进行阐述。
Chinese traditional food and dishes,which have a long history,were famous for their special flavor,high nutritional values and great varieties.However,the industrialization of Chinese traditional food and dishes have been restricted seriously by short of attention and support,weak fundamental research,lag in technology,and low level of industrialization.In this review,current status and problems of Chinese traditional food and dishes were analyzed.The development tendency was pointed out.The key scientific problems existed in the industrialization of Chinese traditional food and dishes were proposed.
