摘要
为探讨冰葡萄酒香气物质的品种差异性,选用云南德钦产区威代尔和雷司令品种酿制的冰葡萄酒,采用液-液萃取法提取冰酒中的挥发性物质,用GC/MS法分析测定。结果表明:从威代尔冰酒中共鉴定出59种挥发性物质,包括8种醇类(33.89%)、18种酯类(24.55%)、4种羧酸类(4.3%)、5种杂环类(7.68%)、6种醛类(7.28%)、7种烷烃(4.7%),3种酚(2.06%)、2种酮(2.4%)和6种苯环类物质(12.06%);从雷司令冰酒中共鉴定出33种挥发性物质,包括4种醇类(34.89%)、12种酯类(47.94%)、1种杂环类(0.25%)、12种烷烃类(3.82%)、1种酚类(0.11%)和3种苯环类(2%)物质。两者最大差异性表现在雷司令冰酒中酯类化合物的相对含量高于威代尔冰酒。
To explore the differences of aroma compounds of ice wine grape varieties, volatile substances were extracted from Vidal and Riesling ice wines in Deqin areas of Yunnan by Liquid-liquid extraction, and were detected by gas chromatograph-mass spectrophotometer method. The results showed that: 59 kinds of volatile substances were identified from Vidal, including 8 kinds of alcohol (33.89%), 18 kinds of esters (24.55%), 4 kinds of carboxylic acid (4.3%), 5 kinds of heterocyclic (7.68%), 6 kinds of aldehyde (7.28%), 7 kinds of alkanes (4.7%), 3 kinds of phenol (2.06%), 2 kinds of ketones (2.4%) and 6 kinds of benzene ring (12.06%). 33 kinds of ice wine volatile substances were identified from Riesling,including 4 kinds of alcohol (34.89%), 12 kinds of esters (47.94%), 1 kind of heterocyclic (0.25%), 12 kinds of alkanes (3.82%), 1 kind of phenol (0.11%) and 3 kinds of benzene (2%). The most difference was that the relative content of esters in Riesling ice wine was higher than Vidal ice wine.
