摘要
面粉增白剂曾被广泛应用于面粉工业,但随着面粉加工技术的进步和消费者食品安全意识的提高,面粉增白剂已无添加的必要,卫生部发布公告自2011年5月1日起面粉中将禁止添加增白剂,所以加强面粉增白剂分析检测技术尤其是快速检测技术与现场检测技术的研究是确保面粉质量安全的重要环节。简要介绍了面粉增白剂过氧化苯甲酰的作用、潜在毒性研究,重点阐述了国内外面粉增白剂过氧化苯甲酰的分析检测技术进展,最后提出了我国面粉增白剂分析检测技术的发展方向。
Flour brightening agent used to be applied in flour milling industry.With technical progress in flour milling and enhancement in public awareness of food safety,it is not necessary to add brightening agent in wheat flour.The Ministry of Health has issued announcement to forbid adding brightening agent in wheat flour since 1st May 2011.So it is very important to strengthen analytical method for determination of brightening agent in wheat flour,especially fast detecting method to ensure the quality of wheat flour.The function and potential toxicity of benzoyl peroxide was briefly introduced,especially about the progress on analysis and detection of benzoyl peroxide at home and abroad.The proposal for development of detection of flour brightening agent in wheat flour was put forward in the end.
