摘要
采取凯式定氮法和光谱分析法测定洋葱中蛋白质的含量,比较紫皮洋葱与黄皮洋葱的蛋白质含量差异.结果表明紫皮洋葱中蛋白质含量较高.
Kjeldahl method and spectrophotometry method are used for the determination of protein in onion.There is a trend that the purple onion has more content protein.
