摘要
目的:了解惠州地区超市和自由市场中部分猪肉、猪肝中重金属铅、镉、铜的污染状况。方法采用原子吸收火焰法测定猪肉和猪肝中的铜,用原子吸收石墨炉法测定猪肉、猪肝中的铅和镉。结果猪肉和猪肝中的铅超市合格率为93.3%,自由市场为86.7%,测定值范围猪肉为0.04~ 0.28mg/kg,猪肝为0.01~ 1.01mg/kg;猪肉和猪肝中镉合格率均为100%,测定值范围分别为0.01~ 0.08 mg/kg和0.02~ 0.16 mg/kg;猪肉中铜合格率100%,测定值范围0.23~ 0.87 mg/kg;猪肝中铜合格率超市为73.3%,自由市场只有26.7%,测定值范围4.90~ 78.9 mg/kg。结论惠州地区猪肉、猪肝的重金属污染状况不容乐观,猪肉、猪肝中均有铅超标现象,尤其是猪肝中铜元素更为严重。
Objective: To find out the contamination of lead, cadmium and copper in pork and pork liver in supur market and free market of Huizhou district. Method: Lead and cadmium in pork and pork liver was determined by graphite furnace atomic absorption spectrometry. Copper in fork, Pork liver and feed was determined by flame atominc absorption spectrometry. Results: The qualified rate of lead in pork was 93.3% in surpuer market,and that is 86.7% in free market; the detection range was 0.04-0.28 mg/kg in pork and 0.01-1.01mg/kg in pork liver. The qualified rate of cadmium in pork and pork liver was 100%, the dection range was 0.01-0.08 mg/kg and 0.02-0.16 mg/kg, respectively. The qualified rate of copper in pork was 100%, the dection range was 0.23-0.87 mg/kg. The qualified rate of copper in pork liver was 73.3% in surpuer market, and that is 26.7% in free market ; the dection range was 4.90-78.9 mg/kg. Conclusion: It was suggested that the situation of heavy metal remains in pork and pork liver was not optimistic. The level of copper and lead in pork and pork liver remained higer.
