摘要
本文论述了大豆异黄酮实现抗氧化作用的两种途径,并着重从分子结构、化学反应的角度阐述分析了大豆异黄酮的抗氧化机理。
This paper summarized the progresses of antioxidative effect of soybean isoflavones and its antioxidant mechanism. The antioxidation effects of soybean isoflavones were analysed by describing its molecular structure and chemical reaction.
