摘要
窖池温度是影响酒醅微生物发酵的重要因素之一。本试验利用窖池温度检测系统对川南某酒厂三口窖池的酒醅温度进行实时检测。通过对整个窖池发酵过程酒醅温度进行曲线拟合及对某时刻温度三维结构图的绘制,可以更加直观的反映窖池内部酒醅温度变化,特别是入窖某一时刻的酒醅温度及整个发酵过程中各层酒醅温度的变化过程,能够更好的指导生产实践。在进一步研究中,可以选取更多窖池酒醅检测点进行实时温度检测,最终建立发酵过程中窖池酒醅温度立体动态变化三维图。
Pits temperature is an important factor for microbial fermentation of the fermented grains.In this study,real-time detection for the fermented grains temperature of three pits in the distillery(located in south Sichuan) was done by use of pits temperature detection system.Through curve fitting in the whole fermentation process and three-dimensional image of temperature was described at one point,it can more directly reflect the temperature change in fermented grains,especially for temperature in fermented grains at a given time of pit entry and the change trend of it during the fermentation,this research results have important directive to production practices.In further research,if we select more test points of fermented grains to real-time temperature measurement,we will build dynamic three-dimensional image about the fermented grains during the fermentation.
