摘要
双歧杆菌是人和动物肠道内最重要的生理活性细菌之一,它具有维持微生态平衡、生物拮抗、免疫调节和营养等多方面的生理功能。刺五加是我国东北地区广泛生长且大量人工栽培典型的药用植物,也是一个十分理想的保健植物。以新鲜的刺五加嫩叶和茎的浸提物为原料,采用双歧杆菌发酵生产,通过单因素及正交试验确定最佳发酵条件为:菌种添加量为4%,发酵温度为37℃,蔗糖添加量6%,发酵时间为8 h;辅料添加量:海藻酸钠0.06%,羧甲基纤维素钠0.03%,黄原胶0.20%,琼脂0.05%;产品调配的最佳配方为:柠檬酸0.1%,蜂蜜2.5%,白砂糖7%,水果香精2%。该产品是色、香、味俱佳的天然营养保健制品。
The bifidobacteria was one of the most important physiological intestinal bacteria of animals and humans.It functions as maintaining micro-ecological balance,biological resistance,immunological regulation and nourishment.Acanthopanax Santicosus Harm was typical medicinal plant which was extensive planted in Northeast China and cultivated largely by people,it was also a good health plant.Using Acanthopanax Santicosus Harms'fresh leaves and stems as the main raw material,then fermented by Bifidobacterium.The optimal formula was determined by orthogonal test.That was,Bifidobacterium fermentation broth 4 %,fermentation temperature 37 ℃,sucrose 6 %,fermentation time 8 h,Sodium alginate 0.06 %,Carboxymethyl Cellulose Sodium 0.03 %,xanthan gum 0.20 %,agaragar 0.05 %,citrate acid 0.1 %,honey 2.5 %,white sugar 7 %,fruit essence2 %.respectively.This product is a natural health food with good color,flavour and odour.
