摘要 γ-聚谷氨酸(Poly-γ-glutamic acid;γ-PGA)是以L-、D-型谷氨酸为单体通过γ-酰胺键聚合而成的一种均聚氨基酸聚合物。γ-聚谷氨酸具有水溶性、可生物降解性和可食用性且对人和环境无毒的诸多优点,这使得γ-聚谷氨酸及其衍生物在食品、化妆品、医药和农业等领域具有广阔的应用前景。 Poly- Y -glutamic acid is a compound of equal poly amino acid that consist of L- and D-glutamic acids through Y -glutamyl bonds. Y -PGA is water-soluble, biodegradable, edible and non-toxic toward human and the environment. Therefore, potential applications of Y -PGA and its derivatives have been of interest in abroad range of industrial fields such as food, cosmetics, medicine and agriculture.
