摘要
辣椒是我国重要的蔬菜和调味品,它不仅营养价值高,还具有药用价值。本文概述了辣椒的营养保健功能,介绍了当今辣椒食品的加工生产以及辣椒中一些有效成分的研究成果和信息。随着人们对辣椒自身价值的深入了解,实现对辣椒的综合开发和利用,不仅做到物尽其用,而且还能产生巨大的经济效益和社会效益。
Capsicum is very important as vegetables and condiment in our country ,chili not only has high nutritional value, but also has the medicinal value. In this article, we summarize the nutrional-healthy function of capsicum, and also introduce the current process of chili products and study of some effective components from chilli. As people have more profound study on Pepper's value, comprehensive development and utilization of pepper not only is doing the best use of pepper, but could also produce an enormous economic and social benefits.
