摘要
氧化应激是造成动物衰老和疾病的重要因素。近年来的研究表明,动植物蛋白水解物具有清除体内过剩的活性氧自由基、抑制脂肪氧化等生物活性。蛋白水解物可作为天然抗氧化剂应用于食品和饲料行业,具有广阔的市场前景,并能为蛋白资源开发提供新的思路。本文从蛋白水解物生产工艺与抗氧化活性评价方法介绍出发,着重探讨了蛋白水解物抗氧化活性的影响因素、作用机理及其安全稳定性等问题,并对其在未来研究中的发展方向和应用前景进行了展望。
Oxidative stress is one of the major factors caused aging and disease in animals. Recent studies have shown that protein hydrolysates (PH) from animal and plant sources have bioaetivity including clearing the excessive reactive oxygen species and suppressing the lipid oxidation. As native antioxidant of food and feed industry, it may have broad application prospects, and provide new ideas in the utilization of protein resource. Based on the introduction of production process of antioxidant PH and methods of anti-oxidant activity evaluation, this paper further summarized current progress of anti-oxidant PH, including influence factors and mechanism of antioxidant function, safety and stability concerns. The prospects of its research and application were also discussed.
