摘要
膳食纤维通过添加到面包、饼干、面条、糕点、早餐食品、小食品和糖果等产品中 ,制成强化膳食纤维的功能性食品 ,在人体内发挥重要的生理功能。由于膳食纤维的物化特性 ,且生理功能受很多因素影响。文章从内外两方面对这一影响因素进行了分析。
Many kinds of food, such as bread, cracker and noodles etc.which have been intensified by dietary fiber have some functional properties and many physiological functions. These functions of dietary fiber are affected by many factors because of its physical and chemical chaaracters. This article will explain some factors, which affect on the functions of dietary fiber.
