摘要
研究了杜仲保健饮料中主要活性成分的稳定性。结果表明,杜仲保健饮料中的绿原酸及松脂醇二葡萄糖甙在低温、避光及弱酸性条件下较稳定。在弱酸性条件下,0.05%Vc、8%蔗糖及0.6%的β-环糊精对杜仲饮料中绿原酸和松脂醇二葡萄糖甙有保护作用。
The stability of chorogenic acid(CGA)and pinoresinol di o β D glucopyranoside (PG)in health beverage were studied.The results showed that the stability of CGA and PG were better at pH 4~5,low temperature and in dark condition.When 0.05% vitamin C,8% sucrose and 0.6% β cyclodextrin were added into the health beverage,the heat stability of these active components could be improved.
