长白山三种橐吾属植物营养成分的分析 被引量:8

摘要 对长白山地区3种橐吾属植物(复序橐吾、狭苞橐吾、蹄叶橐吾)的粗蛋白、粗脂肪、粗纤维、胡萝卜素、氨基酸、维生素C及微量元素等营养成分进行了分析。结果表明:狭苞橐吾中粗蛋白、粗纤维、氨基酸、维生素C及锰和锌的含量最高;复序橐吾中粗脂肪含量最大;蹄叶橐吾中总糖、还原糖、胡萝卜素及磷含量最高。3种橐吾属植物营养丰富,各种营养成分较为齐全,是健康药食两用植物。为开发长白山橐吾属植物资源及利用其食用价值提供科学依据和参考。 The crude protein, crude fat, crude fiber, carotene, amino acid, vitamin C and trace elements and other biological nutritional components of the Ligularia jaluensis, Ligularia intermedia and Ligularia fischeri from the region of changbai mountain were analyzed. The results showed that the highest content of crude protein, crude fiber, amino acid, vitamin C,Mn and Zri was determinated in the Ligularia intermedia ;the content of crude fat in Ligulariajaluensis was highest;the content of total sugar,reducing sugar,carotene and P was largest in Ligularia fischeri. The nutrition of the three Ligularia was rich and comparative complete,as a result,they were used for health medidne and food. It provided scientific basis and reference for the development of wild vegetables and their edible value of Changbai mountain.
