东北地区大豆品种加工品质分析

The Analysis of Processing Quality of Soybean Varieties in Northeast Area of China

摘要 对黑龙江、吉林、辽宁和内蒙古4省近10年来通过审定的183个大豆品种的油脂含量、蛋白质含量、蛋脂总量以及11S和7s球蛋白亚基组成、相对百分含量和11S/7S比值等与大豆蛋白的营养价值和加工特性密切相关的因素进行了分析评价。结果表明,东北地区大豆品种的油脂平均含量为20.61%,蛋白质平均含量为41.54%,蛋脂总量平均值为62.16%。油脂含量以黑龙江和吉林较高,但省份间差别不大,黑龙江和吉林高油品种所占比例较大。内蒙古和辽宁的大豆品种蛋白质含量高于吉林和黑龙江,且高蛋白品种所占比例也较大,蛋脂总量也表现出相同的趋势。7s、11S球蛋白平均相对含量分别为28.95%和56.30%,11S/7S比值的变异幅度在1.34~3.32之间,平均值为1.97;吉林、黑龙江、辽宁和内蒙古四个地区大豆群体蛋白亚基组成及11S/7S比值存在显著差异。 The oil content, protein content, total protein-oil content, subunit composition, relative percentage content of 11S and 7S and the 11S/7S value of soybean varieties tightly associated with the nutrition and processing properties were analyzed. These soybean varieties were through validation over the past 10 years in Heilongjiang, Jilin, Liaoning and Inner Mongolia provinces. The results showed that the oil content was 20.61%, protein content was 41.54% and total protein-oil content was 62.16% on average of these soybean varieties. There was no significant difference of the oil content among the provinces. The oil content and the proportion of high-oil varieties were higher in Heilongjiang and Jilin than in Inner Mongolia and Liaoning. The protein content and the proportion of high-protein varieties were higher in Inner Mongolia and Liaoning than in Jilin and Heilongjiang, total protein-oil content also showed the same trend, llS and 7S globulin average content were 56.30% and 28.95%, 11S/7S value ranged from 1.34 to 3.32, with an average of 1.97; 11S/7S value was significantly different among the four cultivated regions.
