摘要
本文综述了大豆及其食品中各种营养成分和生物活性物质的种类、含量,以及对人体的营养保健作用,并对大豆食品产业的发展进行了展望。
The variety and health effects of nutrients and bioactive substances in soybeans and soy foods were reviewed in this paper, and the development of soy foods industry was prospected.
