摘要
针对大豆挤压膨化预处理浸油时 ,浸出率提高、浸出时间缩短这一现象进行研究。应用了植物显微技术中的石蜡制片法和显微摄影技术 ,分别对大豆挤压膨化物和大豆轧胚胚片制成切片 ,切片染色后显微摄影。所得照片和大豆组织照片比照后显示 :大豆轧胚后其油料细胞被压成扁长形 ,部分细胞壁有不彻底的破坏 ,没有油脂聚集现象 ;大豆挤压膨化后其油料细胞壁破坏充分且有明显的油脂聚集现象。指出大豆挤压膨化预处理较轧胚预处理具有明显的优势。
Cutting both extruded soybeans and rolled soybeans into slices,colouring and microphotographing,appling section of technology paraffin wax and technology of microphotograph and comparing with the photo of soybean tissue,we concluded that the cells of rolled soybeans were damaged incompletely and the fat in the cells was not gathered obviously;and that the cells of extruded soybeans were broken throughly and the fat was in the cells accumulated.It points out that extrusion preparation for solvent extraction has the superiority over rolling preparation.
