摘要
研究结果表明 ,酶反应的最适条件为 :初始 p H 6 .0 ;反应温度 50℃、时间 1h;初始蔗糖浓度2 5%。在酶反应过程中添加果糖会促进蔗果三糖的生成 ,其最佳添加时间为反应进行了 30分钟 ,最佳添加浓度为 15% ,可使蔗果三糖的产量提高 50 %。酶的热稳定性随处理温度的提高下降。
Optimization of the production of fructooligosaccharide in reaction systems was investigated. As a result, the optimum conditions for the enzyme reaction system were as follows: initial pH, 6.0; temperature, 50℃; reaction time, 1 h; initial sucrose concentration, 25%. The synthesis of fructooligosaccharide was promoted by 50% through supplement of fructose in the course of the enzyme reaction. The optimum time for the addition of fructose was 30 min after the reaction has started and the optimum concentration of fructose was 15%. The thermostability of the enzyme decreased with a increase of treating temperature.
