摘要
小豆富含蛋白质和淀粉,是做豆沙的主要原料。为了了解小豆豆沙的加工品质,本研究分析了不同来源小豆品种出沙率差异、出沙率年度间差异、出沙率与籽粒蛋白质和淀粉含量的相关性以及出沙率与豆沙中蛋白质和淀粉含量的相关性等。结果表明:品种来源、籽粒百粒重与出沙率相关性不显著,出沙率与籽粒蛋白质含量呈极显著正相关、与淀粉含量呈极显著负相关,籽粒中含有一定量的水溶性蛋白和水溶性直链淀粉。高蛋白质、低淀粉是培育高出沙率小豆品种的2大重要指标。
Adzukibean, rich in protein and starch, is the raw material of sweetened bean paste. In this paper, 41 varieties from major production regions in china were used to analyze thesweetened bean paste rate (BPR), the correlationships of BPR with protein content, starchcontent and lO0-seed weight, etc. The results indicated that the sweetened bean paste rate hadno significant difference with regions and lO0-seed weight, but had very significant positive correlation with seed protein content, and existed extremely significant negative correlationwith seed starch content. Aazukibean grain contains a quantity of water-soluble protein and water-soluble amylose. High protein content and low starch content were two important indi-ces for breeding high bean paste variety.
