结冷胶发酵生产工艺的优化

摘要 本文通过描述进行的摇瓶实验及其结果,得到了结冷胶生产工艺中的最佳发酵培养基配方。通过改变发酵培养基中碳源、氮源的百分比,进而测量结冷胶发酵液的粘度、产胶率,来确定最佳发酵工艺。进行的50L罐发酵实验,得到的发酵液粘度为19.6Pa·s,粗胶产胶率可迭1.73%以上,清胶产胶率0.80%。本文结果为生产中优化结冷胶的发酵工艺,提高结冷胶的粘度和产胶率指明了科学的方向。 By the way of describeing the shake flask experiment and the results,an optimal fermentation formula for production of Gellan gum have been got in this paper. By changeing the percentage of the carbon source and nitrogen source in the fermentation culture medium, we have obtain the best fermentation technology. In the experiment of 50L tank,we got 19.6Pa · s fermentation liquor viscosity,exceed 1.73% rough gum productive rate and 0.80 % clear gel productive rate. The outcomes of this paper set a scientific direction for optimizeing the production technology of Gellan gum fermentation and raiseing the viscosity and gum productive rate.
