摘要
采用气相色谱-质谱(GC-MS)对国内多种食用油中的缩水甘油酯(GEs)进行了分析,确定了7种常见的缩水甘油酯。结果表明:不同食用油中普遍存在着含量相当的GEs,且GEs的相对组成与食用油中脂肪酸组成有一定的相关性。
Glycidyl esters(GEs)in edible oils were determined by gas chromatography-mass spectrometry(GC-MS)in China,and seven kinds of GEs were identified.The results showed that the amount of GEs were approximately equivalent in different oils.Furthermore,there was certain correlation between the relative composing of GEs and the fatty acid composition of edible oils.These results might be useful in safety assessment of edible oils.
