摘要
宋代两京饮食服务业的发展得益于两京规模扩大、人口剧增,民风奢华、市民游览成风,上流社会人士热衷户外饮食消费三个有利因素。从为饮食服务业的发展提供广阔舞台和庞大消费群体、营造良好消费环境、对普通民众的引领导向三个方面刺激和推动了宋代两京饮食服务业的发展。按照功能、档次及特点,可将宋代两京饮食服务业分作饮、食兼营的酒楼,主营主食的食店,主营饮料的茶肆,走街窜巷、沿街叫卖的流动服务及地方风味食店五类情况。
The development of the two capitals catering services in Song Dynasty followed the three impacted factors : population growing and expansion of the two cities, all the people fond of wandering to consume, the upper class enjoying food outside. These had promoted the service by offered the enormous consumers and the perfect context, the followed guidance to the public. Accoming to the function, level and character, the catering service could be divided into five categories: the hotel served dishes and drink, the restaurant served food, the teahouse just for drink, street hawkers, and local flavor shop.
