摘要
现存的维生素测定方法之间存在一定的差异,亟需找到一种简便、快速、准确的标准测定方法,便于实际应用。本文对近年来国内外食物中维生素的常用分析方法进行了综述,主要包括微生物法、化学发光法、高效液相色谱法、免疫分析法等,介绍了各种分析方法的原理、适用范围以及各自的特点,并分析了目前维生素分析方法存在的问题及发展趋势,为今后维生素的分析提供参考。
The results between a variety of analytical methods of vitamins are different. Therefore, it is urgent to find a standard method which is convenient, fast and accurate. This paper provides a comprehensive overview of various analytical techniques for the analysis of vitamins at home and abroad in recent years, including microbiological method, chemiluminescence, high performance liquid chromatographic (HPLC) method and immunoassay method, etc. The principles, fields of applicability and the advantage or disadvantage of various methods were discussed. The problems at present and the emphasis of analysis of vitamins are put forward in light of the potentiality of technical novelty.
