通过应用HACCP质量管理体系对鲜无花果的流通过程进行危害分析,确立采收、包装、保鲜和贮藏是鲜无花果品质安全控制的四个关键控制点,通过制定详细的HACCP计划表,为鲜无花果在流通中的质量安全控制措施提供依据。
The paper analyzes the hazards in the process of fresh fig circulation by applying the HACCP system, identifies four critical control points in fresh fig quality management which are harvesting, packaging, preservation and storage and draws a detailed HACCP schedule to ensure product quality in this process.
