摘要
采用差示扫描量热仪(DSC)和X-射线衍射仪(XRD)分析白砂糖、白冰糖、黄冰糖的热学性质和晶体结构。结果表明,色素是以包埋共结晶形式存在于蔗糖晶体中,而不是以分子间非共价键的共结晶形式存在。为蔗糖-色素、蔗糖-活性物质包埋共结晶的深入研究及产品开发提供了依据。
Differential Scanning Calorimetry (DSC)and X-rays Diffraction (XRD)were used to analyze the phase transitions and structure of sugar,white multicrystal rock sugar and yellow multicrystal rock sugar. Results showed that the pigment and active compounds were incorporated into sucrose crystals, rather than intermolecular noncovalent eutectic crystal. It was provided a basis for sucrose pigment, sucrose-active material entrapped crystallization research and product development.
