摘要
反式脂肪酸(TFA)是一类含有反式双键的不饱和脂肪酸,它普遍存在于一些常见的食品中,与人类健康有着密切的联系。本文综述了反式脂肪酸的来源、对人体健康的危害以及食品中反式脂肪酸分析检测方法,对反式脂肪酸今后的研究方向做出了展望。
Trans fatty acid （TFA）is generic name of a type of unsaturated fatty acid that contains trans double bond configuration.It widely existed in some of the common food and linked with human health closely. The paper summarized resources, hazards, detection methods of trans fatty acid and made a prospect for its research directions.
