响应面法优化河套蜜瓜皮水溶性膳食纤维提取工艺的研究 被引量:4

摘要 以河套蜜瓜皮为原料,采用化学法对原料中水溶性膳食纤维的制备工艺进行了研究。在单因素实验的基础上,采用响应面法对影响水溶性膳食纤维得率的四个因素pH、料液比、温度和时间进行工艺优化。结果表明,化学法提取河套蜜瓜皮水溶性膳食纤维的最佳提取工艺条件为pH12、料液比1∶40(g/mL)、温度80℃,时间30min。在此条件下,河套蜜瓜皮水溶性膳食纤维得率可达25.03%,与模型高度拟合。 In order to obtain the preparation technology of water-soluble dietary fiber,Hetao muskmelons peel was used as raw materials by chemical methods.On the basis of single-factor experiments,a four-factor,three-level Box-Behnken design combining with response surface methodology(RSM)was employed to optimize four crucial extraction conditions for maximizing yield of water-soluble dietary fiber.A regression model was established for yield of water-soluble dietary fiber as a function of the four extraction conditions.Under the optimized conditions as follows:pH12,material/liquid ratio(g/mL)1∶40,hydrolysis temperature of 80℃,with hydrolysis time of 30min.Under the optimum conditions,the experimental value of yield of water-soluble dietary fiber was 25.03% and was in good agreement with the predicted value.
