摘要
目的:了解宁夏常见植物油维生素E含量水平,及其加热损失。方法:应用高压液相色谱法分析生育酚的四种同系物及其总量。结果:对11种植物油维生素E的分析表明,植物油含量在864~23704mg/100g;烹调加热前后损失率1028%。
Objective: To investigate the vitamin E content of plant oils from Ningxia market.Methods: High performance liquid chromatography was used. Results: The vitamin E contents of plant oils ranged widely from 8. 65mg/100g to 237.04mg/100g. VE loss by cooking was about 10.28%. Conclusion: The data are necessary for estimating the local popullation's vitamin E intakes.
